Smugglers would sink barrels of illegal spirits to avoid taxes. To make the recovered spirits drinkable, bartenders would make a shrub using vinegar, sugar, and citrus fruit. This shrub skips the ocean and the spirits and goes right to the flavor. Allow extra time to create the Cranberry Orange Shrub and let cool.
2 cups (500 ml) sugar : 2 cups (500 ml) water : 2 cups (500 ml) cranberries : pinch salt : zest of 1 orange : 1 cinnamon stick, broken : 2 sprigs rosemary : 1 cup apple cider vinegar Combine ingredients except vinegar in a saucepan and bring to a simmer, stirring occasionally. (Don't boil or the cranberries will pop.) Take off heat, add vinegar and stir to combine. Let cool completely. Strain and store in an airtight container.
